It's been a very long time since I've posted any recipes, which I regret. After all, we can learn so much about life through cooking and eating!
Some of the most important books on my bookshelves are cookbooks, and there are so many great online resources these days, too. The problem is, it's hard to find the time to sort through them all to find the ones that are the most appealing. And even then, you never know until you actually try them!
Seeking out recipes is not much different than seeking out great books, when you really think about it. You kind of have to be your own personal librarian to find the ingredients which will be the easiest for you to digest! When there are so many options, it's not an easy task.
That's why I like to present you only with the resources that feed my heart, mind, and soul. Healthy food and books-in-print are two of the most important things in my life, other than my family, of course!
I like the recipes with the least number of ingredients, and the ones that can be made quickly. It is not unusual for me to "tweak" a recipe to make it even healthier.
So, here are 3 recipes I recently discovered that I hope you'll enjoy as much as we did:
- Cooking Light's Roast Chicken with Balsamic Bell Peppers - I found this recipe via the actual January 2010 issue of the magazine, and the only change I made was that I put it over brown rice instead of making the Mascarpone Potatoes as a side dish. My son didn't like the taste of the fennel (it adds a light a sausage flavor), but the rest of us did.
- Cooking Light's Three-Bean Vegetarian Chili - found in same magazine. I like this recipe even better than a vegetarian chili recipe I mentioned once before. The only changes I made were to use chicken broth instead of vegetable broth, and since I didn't have squash on hand, I put extra red pepper in. Next time, I will be sure to make it with the squash, though. The green onions added a really nice flavor.
- Mealmakeovermoms.com's Favorite Chocolate Cookie - found via their cookbook, which I mentioned when I recommended some soup recipes. I love these cookies! I tweaked the recipe by using oat flour instead of white flour (a trick I learned from Bethenny Frankel.) I used pecans, and chose to omit the granulated sugar. I didn't sift the cocoa powder either - I mixed the dry ingredients with a whisk instead.
I hope you enjoy these recipes! I'm so glad I was able to find them online. It just goes to show that when you use a wide variety of resources, a whole new world opens up to you.
