As we are to closing out the month of March (wow, this year's already flying), I'd like to share another healthy recipe. Just to let you know, April will be an exciting month. It's National Math Awareness Month and National Poetry Month in the USA, as well as Earth Day on April 22nd. I have a lot of great resources to share with you!
You don't have to be a vegetarian to enjoy this wonderful recipe for "3-bean chili" from Family Circle magazine and parents.com. I'm a part-time vegetarian, meaning I try to go as many days without meat as possible. It's healthier for me and the planet, and it's less expensive. That doesn't mean that you can't add chicken, turkey, or ground sirloin to it, though.
Anyway, I make some slight modifications to most recipes. With this one, I substitute a 28 ounce can of Muir Glen organic crushed tomatoes for the 8 ounce can of tomato sauce and the ketchup. I also use pinto beans instead of the white beans (organic ones, whenever possible), but you can use whatever beans you prefer. I also add a bit of salt (usually kosher or sea salt). If you don't like it too spicy, reduce the chili powder to 2 tablespoons. On the other hand, if you want it spicier, you can add a jalapeno! For a sweeter taste, a little bit of brown sugar will do the trick.
It's delicious with some grated cheddar on top. I like Cabot 50% reduced fat white cheddar. Oh, I also go out of my way to find organic red peppers, because peppers have a high concentration of pesticides on them. The only place I've been able to find them is Trader Joe's. GreenGuy loves to eat red peppers with meals, or as a snack.
I love that this one meal provides you with so many antioxidants and so few calories. It's not always possible to eat 5 to 9 servings of fruits and vegetables every day, but eating a serving of this chili makes it easier. Enjoy!
